Custard's Last Stand...

Just kiddin'.


Well, It is custard, but not the last stand.  (And yes, hehe, I realize it was Custer, but I love a good pun...even though that is nothing like a good pun...)


Made some no sugar added custard last night and it is delicious.


Scald 3 cups of milk and set aside


Whip together:

4 eggs

1/2 cup of Splenda

tsp vanilla

dash of salt


Add scalded milk to mixture and whip


Pour into glass loaf pan


Sprinkle nutmeg on top


Place filled loaf pan in a larger glass or ceramic baking dish and add an inch of water to the baking dish to serve as a double boiler.


Bake at 350 degrees for 45 minutes or until inserted knife comes out clean


Cool and enjoy!

Very nice of Atkins to come out with fake M & M's.  Even some with peanuts.  I can get my M & M fix without the sugar rush that does me in.  I'm pretty excited about that.


Between that and Hersheys sugar free milk chocolate and milk chocolate with caramel, I'm pretty well set.


I am such a choco-holic.

I can't believe how many flavors of cream cheese are out there now!


When I was young, there was one flavor...plain.


In my fridge right now I have blueberry, pineapple, strawberry, cinnamon, pumpkin, honey, whipped chocolate, whipped strawberry, whipped white chocolate raspberry, garden vegetable, chive and onion, chipotle, jalepeno, and the old standby of course...plain.


It's insane, but I love it!  When I need a quick low carb sweet taste, I sneak a spoonful of cream cheese and I'm good to go.  It's as good as a piece of candy.


When I need a bit more, I spread some on a low carb tortilla and I have an awesome low carb dessert.


It doesn't get any better than that...unless of course it's Hershey milk chocolate.

Amazon.com is a wonderful thing!  When the prices there match or better Walmart prices for the same exact item, you gotta love it...especially when there is free shipping directly to my door involved.


Spent the morning at a doctor appointment for my youngest, then had to run out for some groceries, so it was very nice to come home, put my feet up, and order some gifts from Amazon.  I believe that's what I'll do with the rest of my Christmas list...order online.


Had to order my husband's gift...apparently nobody around here keeps it in stock...and then my oldest picked out things we couldn't find anywhere but online.


*Heavy sigh*  I suppose I'll just have to suffer through the hardship of pointing and clicking.  According to my feet, my hands have no room to complain after our lengthy trip to the outlet mall the other day.


Well, off to shop some more.



Feeling Christmassy...

My living/dining area is now full of Christmas cheer!  Just a few more touches and I'll be done with that and able to curl up in a blanket on the sofa enjoying the lights, decorations, and soft holiday music with a hot cup of something in my hand.


There is no time of the year I love more than November and December.


Now that I have all of that done, I should be able to finish my holiday short story.  Nothing like a bit of Christmas cheer to put me in the mood to write.


Gonna have to cut down on coffee and tea, so perhaps i'll try out some hot chocolate!

One Christmas tree twinkling in my living/dining room.

I Stand Corrected

Traveled about an hour today to watch, not a dog show, but a dog agility trial or some such thing.  My daughter did not hesitate to correct me. She is considering doing something like that in the future, but had never seen one other than on TV so I agreed to go with her.


Besides enjoying the simple fact that she bought my lunch--a cool wrap from Chik-fil-A, which is only around 13 carbs--I have to admit, the events were fun to watch.


The one we attended was extremely informal and looked to be a fairly tight-knit community.  We got a few stares since we were new and didn't have a dog, but people smiled and were friendly.


One dog was extremely friendly and we were able to pet him.  He was a tri-color border collie and beautifully built.  We loved watching him.  He was fast and smart.


There was one tiny tiny dog that jumped over tiny tiny jumps and it was so stinkin' CUTE! 


The whole thing was quite the experience.  We cheered, we laughed, and basically had a great time. 


I am, however, glad it is the weekend now.  Weekends are the time I usually get to stay home and I enjoy that a lot as I am a homebody at heart.


Maybe we can put up our Christmas tree tomorrow.

Kitchen almost done!

Our kitchen floor will be tiled soon.  After that I'm going to relax and enjoy the holidays in my new kitchen without thinking about cabinet hardware or cabinet crown molding or adding cabinets to the top of my existing cabinets...


I am going to clear my mind and start cooking!


I've been researching some low carb stuffings, and I believe I'm going to experiment this year.  Hopefully, I'll remember to write it all down as I do it.  I hate following recipes and like to take a bit of something from one and a bit of something from another and make my own masterpiece.  The problem with that is remembering what I've done.


Here's a quick and easy low carb peanut butter/chocolate fudge that I love to make on short notice.  The amounts noted for the ingredients may vary according to personal preference.


1/4 cup water

3/4 cup Splenda

One and a half cups peanut butter

3 - 5 ounces sugar free milk chocolate (vary according to taste and consistency)

a couple drops of vanilla if desired

Bring water and Splenda to boil.  Remove from heat.  Add vanilla if desired.  Stir in peanut butter until even consistency.  Stir in chocolate until even consistency.

At this point, add in any other extra ingredients such as pecans or peanuts or any other additions that sound good.

Allow to set up.  Refrigerate for faster setting up time.

If you watch the FreePartay website that I mentioned in one of my other entries, you could get all of Mimi Barbour's The Vicarage Bench Series for free eventually.  It is a rather cute series that involves time travel. 


I'm not usually a fan of the fantasy genre, but I enjoyed most of the series--some more than others--but all held my interest enough to finish.


I'm not overly fond of any of her other series, just that one, but other people seem to enjoy the rest of her stuff.


Visiting my parents tomorrow and then attending some sort of dog show on Friday with my oldest daughter.  Hope the weather stays nice.





Shopping...Must...Stop...

More achy breaky feet from shopping...and it was so cold!  I'm a Texan through and through so when it drops into the thirties and forties, I get cold.


I mean, good grief, we have a freeze warning for tonight!  In November...!  It's supposed to dip into the mid-twenties...!


Where's my blanket and hot drink?


Maybe it will put me into enough of a Christmas mood to get my tree set up since I fell down on the job this last weekend and didn't get it done.


One can hope!
