I love cooking in my kitchen now. Won't have the floor done until the week after Thanksgiving, but the countertop and backsplash are great and my new sink and faucet are awesome.
Made a simple no-sugar-added cheesecake today. Yummy!
16 oz cream cheese
1/2 cup Splenda
1/2 tsp vanilla
dash of milk if needed for desired consistency
Mix all ingredients and pour into baking dish. Place filled baking dish into larger baking dish and add water to the larger baking dish to create a double boiler.
350 degrees for approximately 50 minutes. Time may vary.
Cool and refrigerate.
Add fruit topping if desired.
I'll have to be careful not to eat too much of it today, but it is so stinkin' good that I'm afraid that will be difficult. Willpower...willpower...
