My low-carb stuffing turned out so well! I was surprised how good it tasted.
Basically, I took a bunch of recipes I found online and picked out the ingredients I liked and it worked.
Ingredients and instructions:
Toast 1 cup of walnuts (place on cookie sheet in oven at 350 degrees for 8 to 10 minutes
Chop or dice and saute in 1 stick of butter:
1 medium onion
4 sticks celery
2 medium carrots
1 cup toasted walnuts
2 cloves of fresh garlic (use garlic press)
1 or 2 cups of turkey (may brown in olive oil before adding to saute)
1 medium peeled apple
Using a low-carb or diet bread, cut into cubes and place in a large bowl. Add 16 ounces of chicken broth. Stir in 2 well-beaten eggs.
Add poultry seasoning, sage, salt, and pepper.
(The amounts of the seasonings are personal preference. One of my family members likes so much the whole thing has to turn 'green' while others prefer just a touch.)
Add the sauted mixture to the bread mixture, blending well.
Pour into buttered rectangular glass casserole dish.
Cover with foil.
350 degrees for 45 minutes to and hour and a half depending on the oven...or the other things you have in the oven...or the humidity...or...anyway, remove the foil for the last 15 to 20 minutes of cooking time.
It was very good!
